International Cooking Club: Thanksgiving Special

In collaboration with Graduate Council, please join us for a very special International Cooking Club to share a Thanksgiving themed meal together! Thanksgiving is an American holiday with rich historical significance. It is America’s oldest tradition and a time when families gather together to celebrate. The impact of COVID-19 makes celebrating a little harder this year, so we are connecting graduate students for a virtual cooking demonstration to acknowledge the holiday. Registration to receive the free ingredients or the complimentary beer stein have sold out, however, additional students can still join the celebration to connect with many other grads!

Roast Chicken
-1 small young chicken
-6 sprigs fresh thyme
-6 sprigs fresh rosemary
-1 tsp red pepper flakes
-2 tsp fennel seeds
-6 tbsp olive oil
-2 lemons
-1 head of garlic
-4 russet potatoes
-1 tbsp kosher salt (plus more to salt the chicken before beginning)

Vegetarian Stuffing
-1 baguette or uncut loaf of any kind of bread
-2 oz pecans
-salted butter
-1 large onion
-3 celery stalks
-fresh sage
-fresh thyme
-fresh parsley
-vegetable broth

Mashed Sweet Potatoes
-6 sweet potatoes
-1 cup whole milk 
-brown sugar
-4 eggs
-maple syrup
-1 lemon
-2 oz pecans

Almondine Green Beans
-1 lb French green beans (haricot verts), trimmed
-2 tbsp unsalted butter
-1/4 heaping cup raw sliced almonds
-2 medium shallots, finely diced
-2 medium garlic cloves, finely minced 
-1 lemon
-kosher salt
-black pepper

Cranberry Sauce
-12 oz bag fresh or frozen cranberries
-1 orange

Caramelized Honey Pumpkin Pie
-2 sticks butter
-1 pint heavy cream
-300g flour
-4 eggs
-50g brown sugar
-15g white sugar
-113g honey
-425g canned pumpkin puree (NOT pie mix)
-vanilla extract and warm spices (cinnamon, nutmeg, ginger, allspice, cloves)
